Baked Salmon with Dijon and Garlic

This delicious recipe is from Natasha's Kitchen which I stumbled across when I googled baked salmon.

Ingredients

600 gm salmon 
2 Tbsp fresh parsley, finely chopped
2 large OR 3 small cloves of garlic, chopped finely
1.5 tsp Dijon mustard 
1/2 tsp salt
1/8 tsp freshly ground black pepper
1/8 cup mild olive oil
2 Tbsp fresh lemon juice 
Oven at 200° C

Steps

  1. Mix the above ingredients together in a bowl. Make sure the garlic is pretty finely chopped. It gets kind of thick and paste-y.
  2. Put the salmon skin-side down (if it has skin) into a baking dish that has been lined with foil.
  3. Brush the paste onto the top and sides of the salmon. It stays on pretty well because of how thick it is and we skipped the lemon slice on top part from the original recipe because it looked really pretty without it as well.
  4. Bake for 15 to 20 minutes. (The original recipe uses the oven at 230° C and bakes it for 12 to 15 minutes but we always make this with the brassica extravaganza and that cooks at 200, so its just easier to cook the fish a wee bit longer.)
  5. Man, its delicious.

Salmon and Eggplant Curry

This Thai curry turned out good – the eggplant tasted amazing!
Ingredients
  • 1 tablespoon canola oil
  • 1 tablespoon plus 1 teaspoon Thai yellow curry paste, (see Shopping Tip) or 1 teaspoon curry powder, or to taste
  • 2 cloves garlic, minced
  • 1 medium eggplant, (about 1 pound), cut into 1/2-inch cubes
  • 1 14-ounce can “lite” coconut milk
  • 1 tablespoon plus 1 teaspoon fish sauce, (see Note)
  • 1 tablespoon light brown sugar
  • 1 pound skinned salmon fillet, preferably wild Pacific (see Note), cut into 1-inch pieces
  • 2 cups sugar snap peas, trimmed
  • 1/2 cup chopped fresh basil
  • 3 tablespoons lime juice
Directions
  1. Heat oil in a large skillet over medium heat. Add curry paste (or powder) and garlic and cook, stirring, until fragrant, about 1 minute. Add eggplant and cook, stirring, until the eggplant is coated with the curry mixture, about 2 minutes.
  2. Add coconut milk, fish sauce and brown sugar to the pan. Bring to a boil; stir in salmon and snow peas. Reduce heat to a simmer, cover and cook, stirring occasionally, until the salmon is cooked through and the peas are tender-crisp, about 5 minutes. Remove from the heat. Stir in basil and lime juice.

Wrapped Salmon

Ingredients
  • 4 (6 ounce) fillets salmon, with skin and bones removed
  • 8 sheets phyllo dough
  • 1/2 cup melted butter
  • salt to taste
  • ground black pepper to taste
  • 4 tablespoons Dijon mustard
Directions
  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Cut the filets into log shaped pieces, about 2 inches wide by 5 inches long, keeping the filet portions separate. Take 2 sheets of phyllo dough, placing one on top of the other, and brush lightly with melted butter, covering the one side completely.
  3. Place a portion of salmon (6 ounces), on the edge, nearest you, of the phyllo dough. Sprinkle with salt and pepper to taste. Coat the portion of salmon with 1 tablespoon of Dijon mustard.
  4. Fold the phyllo dough, nearest you, over the salmon and make one complete wrap. Take the sides of the dough and fold them towards the center, and continue rolling up the dough. Brush all sides with butter, covering completely and place on a cookie sheet. Repeat steps for remaining portions of salmon.
  5. Bake in preheated oven for 20 minutes or until phyllo dough is golden brown.

Tom Kha Pladuk

There are two staple soups in Thai cuisine: tom yam is a hot spicy clear soup with elements of sweet and sour flavors added. Tom kha is a milder soup with coconut milk and galangal (kha) dominating rather than the fiery prik (chili) of the tom yam. Because it is milder tom khas are often made with chicken or pork, but most common in Thailand are varieties using seafood (especially shrimp, squid, or fish such as red snapper or catfish) or vegetables (especially medleys of mushrooms, tom kha hed). The catfish can be "crisped" by quickly, and briefly, deep frying it in very hot oil, but this variation is based on simply poaching the fish in the soup.

In Thailand the fish is cleaned and then poached whole (with the head), then removed from the soup and cut into bite sized pieces which are returned to the soup for serving. The method here is a little simpler, in that it doesn't involve handling the hot fish.

Thais eat the galangal, which is cut into thin matchstick pieces. However it has been noticed that many Americans prefer to discard the galangal and so it may be wiser to leave the galangal in thin slices. Similarly the lemongrass is eaten, but you may prefer to cut it into 2" lengths, and crush them with a mallet. These may then be discarded by the diner.

Ingredients

  • 1 catfish (about half a pound prepared weight)
  • 2 cups fish stock
  • 1 cup coconut milk
  • 1 tablespoon galangal, julienned
  • 1 tablespoon lemongrass, thinly sliced
  • 1 tablespoon coriander/cilantro leaves
  • 1 tablespoon Thai chile peppers, thinly sliced
  • 4 tablespoons fish sauce
  • 4 tablespoons lime juice

Method

Bring the stock to a simmer. Add the galangal, lemongrass, coriander, chilis, fish sauce and lime juice, and bring back to the simmer. Clean the fish and cut it into 1" steaks, then divide them, removing the bones. Add the fish to the soup, and the coconut milk and bring back to a very gentle simmer, and poach the fish for 3-4 minutes (until just cooked).

Lax i ugn

Det här blev riktigt gott, och var väldigt enkelt att göra. Vilka rotfrukter som helst passar bra. Till örtsåsen använde jag timjan.
Ingredienser:
  • 4 st portionsbitar lax
  • 8 st vårlökar
  • 12 st späda morötter
  • 8 st rädisor
  • 4 st små palsternackor
  • 16 st små, halvkokta färskpotatisar
  • 1 knippe hackad dill
  • 1 msk pressad citron
Till örtsås:
  • 2 dl majonnäs
  • 2 dl creme fraiche
  • 1 dl blandade hackade örter
  • 2 st pressade vitlöksklyftor
  • 1 tsk honung
Gör så här:
1. Sätt ugnen på 200 grader eller tänd grillen. Koka potatisen halvmjuk i lättsaltat vatten. Ansa och skölj grönsakerna, dela ev palsternackorna i mindre bitar.
2. Smöra 4 folieark. Hetta upp en stekpanna med lite olja i botten. Salta och peppra laxen ochh stek dem hastigt så de får lite färg.
3. Lägg laxen på foliearken och fördela grönsakerna och potatisen över och omkring fisken. Salta och peppra och strö över rikligt med dill. Pressa över citron och klicka på lite smör. Vik ihop till täta paket.
4. Lägg paketen på grillen eller i ugnen ca 20 minuter. Blanda samman alla ingredienser till såsen och smaka av.
